otherwise known as quinoa, this grain makes me happy. i love how it puffs up. i love how ridiculous i sound saying it.

when i served it at dinner the other night, everyone had a GREAT time saying it over and over (aedan wins for most repetitions--he'll probably have a song written by the end of the week about it). unfortunately, no one but me actually LIKED this dish. but i have hope. i thought it was so yummy. i'm definitely making this again. the plums are my favorite part of it.
(note: the longer this sits in the fridge, the more purple it gets, which i think makes the dish look even more gorgeous. this picture was taken right after i made it and before it had sat for a long time. so i recommend making it the night before and letting everything really mix together.)

if you are concerned about gluten, you will be happy to know that it has NONE in it. this is exciting for me since my dad has rheumatoid arthritis and is trying a natural diet to reduce his pain--and he's been told to avoid sugar and gluten. so i keep inundating him with ideas about what to try.

Dan's Mom just gave me a recipe for quinoa...I haven't tried it yet, but hopefully will get to it ya'll from Texas!
